What's For Dinner?
Southwestern Spring Rolls!
Here's what you'll need:
- onion (I only used two slices because my sister is stupid and doesn't like onions)
- spinach (frozen or fresh but if you decide to use fresh be prepared to use a shitload of spinach. deceiving little suckers)
- 1 can of black beans, rinsed
- 1 can of corn, drained
- Mexican shredded cheese (however much your little heart desires, I don't judge.)
- egg roll sheets
Add all of the ingredients (minus the egg roll sheets) into one bowl and mix. It's not pictured here but I sauteed the spinach and onions before adding it to the bowl
Add seasonings of your choice. I chose chili powder, cumin, and garlic. Scoop a spoonful into your egg roll sheet and spread it into a line from one side corner to the other then take the corner facing you and fold it over the line of food.
Next, you're going to fold the two side corners over the food as well. Now before you roll the rest of it, dampen the last remaining corner with water then roll away from you so the roll doesn't come apart. Repeat until there is no more mix left in the bowl or you run out of egg roll sheets.
Put your rolls in the pan and preheat your oven to 425 F (Add some kind of cooking spray/oil so the rolls don't stick to the foil/pan) Cook for 15 min.
Ugh, they look fantastic and taste so damn good. Feel free to put your own spin on it when you try out this recipe!
